Energy bars

Most shop bought energy bars are hard, tasteless and expensive. These are very soft, very tasty, cheaper and healthier. There is also no added sugar in them, as the unrefined sugar naturally occurring in the honey makes them sweet enough.

Ingredients (makes 16)

450g peanut butter (we use Meridian)
450g honey
350g jumbo rolled oats
200g natural meal supplement
300g sultanas
100g dried cranberries (we use Craisans)

Method

Preheat oven to 180C / 350F / gas mark 4. Line a ovenproof dish with parchment paper; we use a roasting dish that’s about 11×8” / 28x20cm.

Melt the peanut butter and honey together in a pan on a low heat. Mix all other ingredients in a big bowl. When the peanut butter has melted into the honey, mix it together thoroughly with the dry ingredients. Put the whole mixture into the ovenproof dish and bake for about 14 minutes.

Let them cool in the pan for a bit and then turn them out onto a chopping board (we don’t have a wire rack but this would probably be better) to cool completely. Cut them up when completely cooled and wrap them in cling film. They last a very long time but you can also freeze them if you’re making a large batch.

Alternatives

This is purely a guide! You can replace the sultanas and Craisans with any dried fruit; cherries and dried pineapple work very well. You can also replace the meal with seeds and / or nuts. This would make them much cheaper.
